Recipe: Salted Dark Chocolate

Mom tested, kitty approved! Seriously. If I knew how easy and delicious making my own chocolate was, I wouldn't have waited until quarantine to start. Lo and behold, I think we're all finding we have hidden talents that will blossom forth when forced into isolation. The control freak (and health nut) in me loves I know every single ingredient in my food and the fact that these are low in sugar. Try to eat just one. Let me know if you can and I'll give you a prize.

1/4 cup cacao butter

1 tbsp coconut oil

3 tbsp cacao powder

1/4 tsp salt

1 tbsp maple syrup

1 tsp vanilla

cinnamon optional

Add ins to try:

1 tbsp almond or peanut butter

1 tbsp peanut butter powder

2 tsp maca powder

2 tsp superfood mushroom powder

goji berries

Place cacao butter and coconut oil in a double boiler or heat safe pot in boiling water. Once melted, turn heat off but keep pot in water to keep the liquid from solidifying. Add all other ingredients and whisk together until smooth.

Pour mixture into chocolate molds (I purchased these from Amazon and LOVE them!) and place molds in freezer. (You can always just use ice cube trays but your chocolates will be large.) Because the molds bend easily, I place it on a cutting board to keep the chocolate from going all over the place. Freeze for about a 1/2 hour. Pop the chocolates out and keep in refrigerator.

I use cacao butter and powder from Terra Soul as I trust the quality and sourcing of their products.

Remember, I'm a big fan of playing with your food! You can always tweak the amounts to suit your tastes and come up with your own add ins! Let me know if you try something fresh!
